What is Château Canon?
Château Canon is both the name of the estate and its flagship wine. The vineyard covers about 34 hectares across the limestone plateau and clay-limestone slopes surrounding the village of Saint-Émilion.
Plantings are primarily Merlot with a substantial proportion of Cabernet Franc (often close to a roughly 55/45 split). Parcels are farmed and harvested separately, and the blend for the Grand Vin varies by vintage.
Winemaking and élevage are traditional and precise: fermentation in temperature-controlled vats, followed by maturation typically in French oak for around 16–18 months, with a portion in new barrels depending on the year and the lots. A second wine, Croix Canon, is produced from younger vines or cuvées not selected for the Grand Vin.
